Don't let the lack of sugar in these muffins fool you...they are really good! I tweaked a recipe from Tasty Kitchen (my favorite place online to find recipes) and came up with these little yummies...
Yummy Muffins
1 1/2-2 sweet potatoes, cooked and mashed
2-3 mashed bananas
1 c plain or vanilla yogurt
1/4 c maple syrup (optional, I usually don't add it)
1 whole egg
2 c flour (I use 1 c white and 1 c whole wheat)
1 Tablespoon baking powder
1/4 teaspoon salt
chocolate chips or nuts for topping
*Mix together moist ingredients.
*Mix together dry ingredients
*Combine the mixtures and stir until just moistened***.
*Fill muffin tins to 3/4 full, you can use paper liners if desired.
*Top with chocolate chips or nuts.
*Bake at 350 degrees for 20-25 minutes. Makes 12-16 muffins depending on amount of sweet potatoes and bananas used.
***Tip: when making any type of quick bread or pancakes (bread/bread products made without yeast for leavening) stir together wet and dry ingredients just until barely moist. If you stir/wisk until all of the lumps are gone, your result will be very tough and hard. This is a bummer for everyone :)
